I have been really into making oatmeal smoothies for breakfast. They're quick and I think fairly good for you... using fruit, oatmeal and milk! Well, I bought some bananas for this and they ripened up faster than we could use them... so I wanted to make either banana bread or muffins. I always like muffins because you can take them with you if you want, and there is something about a muffin that makes it tastier to me. And who doesn't like a crumb topping? So, I found this recipe and they were light and fluffy and delicious! I would definitely make them again if we have overly ripe bananas. :) Dude told me that he loved them and Lucy mowed hers down too. Oh, and did I mention that it makes your place smell great when they're baking?
