I put the Pinterest app on my phone (I know, it's worse than having put Candy Crush on there) and I was browsing it late one night when I was hungry... this was one of the first things I saw and thought that it looked delicious. I love roast beef and the tang of horseradish so my mouth was watering. I thought that I should branch out more than just doing desserts for Gaetan's classes and I thought that this would be a nice little finger food... although, he is done with classes now, I guess I will just have to appreciate them :) It wasn't as tangy as I thought it was going to be and to me the red onion was pretty overpowering, but I liked them. It would be a great thing to bring to a party or have as an appetizer. I didn't use the lavish that they suggested but just regular tortillas.

Sweet Potato Pie
This was the recipe that I got from NPR and used for our Thanksgiving. I have since made it again (per the family's request) and it is something that we will be having again. :) This is nice because you can make the sweet potato part ahead of time and then it would be really fast to throw in the oven.

Peppermint Fudge
I've never tried to make fudge before (probably because I don't enjoy it that much) but this looked rather yummy and easy to do! I learned something about heating chocolate up too, which was helpful. If you heat it to quickly then it becomes grainy and clay like... so that was the trick was to make sure it didn't get heated to fast. It was a big success! It was smooth, rich and it's gone... :) I couldn't find the peppermint chips at the store so I just went with the regular Andes mints, which was equally as delightful.

Peanut Butter Chocolate Dessert
This is the dessert that I made for Gaetan's department party. Its really easy to make and the kids loved helping me stir and unwrap! Norah didn't love when I was blending the oreos, but other than that it was a huge success! It is pretty rich and I didn't have a 9x9 so I just put it in this trifle dish. I think it looks nice!

Greek Quinoa Salad
This is a fantastic side! I just wanted to sit down and eat this for my entire meal instead of the protein I had prepared! I did add some minced garlic, didn't use the lettuce and totally forgot about the broth (so it had a bit more zing, but we liked that!) I added a bit of oregano to it as well, and it was tasty tasty! Great for now and the summer. The feta really helped cut through the acid of the balsamic vinegar... yum yum!

Chicken Kisses
This was a great recipe to use left over chicken from our crockpot rotisserie chicken. It is fast, hearty and a great comfort food. Strange name, but we got past that. I didn't mince onion but used onion powder instead and added a bit of garlic powder as well.

Crockpot Chicken Noodle Soup
This is a great recipe that makes your house smell delicious as it cooks and is really fast to throw together! This is an easy recipe on a classic, and is fabulous with all this cold weather!
