I have to admit that I really like cabbage. I like to eat it raw, and I like it in things. I prefer to have my vegetables a bit al dente... not mushy at all. My favorite cabbage soup that I've ever had (so far) is actually from Big Boy. Strange, I know, but whatever. It's delicious. So, I was craving it because it was full of vegetables and it was going to definitely warm you up on a cold winters day!
This recipe makes a lot of soup. I made corn bread to go with mine... and I followed the instructions to use V8 instead of water. Mine had a bit of a kick to it, (I'm not actually sure where it came from... perhaps the black pepper) but it was good. The kids mostly enjoyed the other vegetables in it, but they did like it. It would be really easy to make after school or work sometime if all the veggies were pre-cut. And the nice thing about this is you can add or subtract whatever veggies you want! :)
