I have been trying to find Korean recipes for some of my favorite foods but the hard part with that is most Korean food isn't written down. It's passed on from Momma to child verbally, by taste and experience. Well, I grew up in West Michigan and my Mom is a 6'' white woman who hates garlic and onion... so as you can imagine I didn't get a lot of experience/exposure to Korean cuisine. I have been exposed more to the flavors of Korean food as of late so I have been trying to find recipes online that I can make. A high school teacher of mine has been helping in my search for true Asian-ness (haha) and her Mom makes the authentic food for our kid's first birthdays. One of the dishes I absolutely love is the Spicy Cucumber Salad. YUMMO. And I am proud to say that I found a recipe online! DOUBLE SCORE. So, I will share it with you. The only thing that this recipe doesn't talk about is adding a little bit of salt to the cucumbers before putting them in and then squeezing any of the liquid that comes out of it. You don't have to but after a little bit the salt from the mixture will leech out any water from the cucumber and make it a little watery... it still tastes good but its just a bit more soupy. I hope that you enjoy this nice summery treat! It's like a refreshing version of kimchi (also, yum).
