This is a great recipe if you're looking for a vegetarian meal that is full of flavor and you don't realize that you're missing meat! Chickpeas are a great way to get your protein and they are DIRT CHEAP. I liked the rice part of the recipe on its own :) The only thing I would change about the recipe is how much leek to put in. I like leek but this seemed to overpower the dish. I think you could really play with this too and add or subtract whatever vegetables you like! Lucy went to town on it and I really liked it. It was a fast dish to make as well. :)
