I saw this on Pinterest and thought it sounded delicious. The past couple of days though I have been really tired and thought it was a lot of work so I never did it... but I finally re-looked at the recipe and noticed that it wasn't that laborious at all... I should've known because I rarely ever like recipes that look like they're going to give me trouble. I have to say that this recipe is delicious. You can make the hash the night before so if you are looking for an easy morning breakfast this would be it! The recipe says to bake the eggs ontop of the hash but for some reason I never have any luck with that... so for next time I think I will just make the sunny side eggs up on the stove and add to the hash. The only thing that took me a bit was to cut up the sweet potato, but the nice part of this recipe is that you keep the skin on! I just used regular breakfast sausage, not the chorizo, and thought it was delicious.
