I'm all for sandwiches and wraps. I definitely wouldn't say that I am any sort of vegan or vegetarian, but there are times that a good wrap stuffed fill of a bunch of veggies sounds so delicious. This particular site just gave me ideas for what one could fill in a wrap! I always think hummus is a good idea and in this instance I used avocado and garbanzo beans for my 'paste' hold things together. I put carrots, red pepper, cilantro, mushrooms and my avocado mixture in there and it was delightful! It was quite filling also, which is a must at this point in my pregnancy. :) The kids enjoyed it too. Lucy mostly wanted the red pepper, and Dude the avocado, but they tried it and that's all I could ask for! This would be a great idea to take on a picnic or the beach because things wouldn't get to soggy... or you could bring everything pre-chopped and that way people can put what they want inside. Whoo!
