Pumpkin Cheesecake Muffins

Oh yes, that's right, I said all the magic words together in one sentence.  haha.  Gaetan had his first E and M exam last Friday, and per tradition, I made his class a snack to hopefully ease the pain of physics.  ;)  And these were YUMMY.  I was really happy with all the recipes that I tried last week, because they were all scrumptious!

Next time I make them I think I will put less batter in each muffin because they got kinda big and messy, but I was trying to fit it all in 12.  They were more on the sweeter side of what I would prefer, but they were easy going down the hatch.  :)

It was reported back that the guys in his class enjoyed them as well.  Always good to know that the snacks are appreciated :)
