Bacon, Cheddar Corn Bread

Again, a rainy fall day just screams homemade bread to me with a nice bowl of soup.  Got the nice bowl of soup out of the way... so what to serve with it?  Bacon?  Of course!  Cheese... a must.  So, when I saw this recipe that combined a few of my favorite things I knew it had to be a winner!

The thing that surprised me about this bread was that there was no yeast, which meant not kneading or rise time.  And for the flour they used cake flour... which made the loaf very light, considering it was chucked full of bacon and cheese...

I thought that it was pretty good.  Especially good when you can soak up a nice warm soup with it.  :)  I guess the only thing that surprised me was when I read corn bread I was thinking like southern corn bread, but there are actual pieces of corn in this bread.  Still good, but just saying.
