I have started trying to roast vegetables and I'm loving it! My neighbors gave us a TON of baby cut carrots and I didn't know what to do, so I roasted them... delicious. I just did mine with salt, pepper and a little garlic powder. There are so many varieties you can do with it I'm excited!

Another one I tried was with corn on the cob. I did the same spices on this one too and it was a nice change of just boiled corn on the cob. I highly recommend both! And with the weather getting colder its nice having the oven on for a little bit ;)
